I thought of using gpu-switch here: but I feel like I'm so close to the answer to solve this that I didn't want to risk breaking anything without asking for advice first. My Bootcamp Windows is still using the dGPU (Radeon Pro 560) and not the RX Vega. I did not even use refind/apple_set_os.efi/ or anything. I am using a Sonnet 550W eGFX with an RX Vega 56 on my Windows 10 BootCamp and after installing and updating the drivers it is detected in my Device Manager.
